  • 0.25 teaspoon ground ginger
  • 1 cup granulated sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups finely shredded carrots
  • 1 cup chopped nuts

Preparation Steps
  1. Preheat oven to 350°F. Spray a loaf pan with nonstick spray and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and ginger. Set aside.
  3. Use a mixer to beat together oil, sugar, eggs, and vanilla until well combined.
  4. Reduce mixer speed to low, gradually add flour mixture, and mix just until combined. Do not overmix.
  5. Stir in shredded carrots and chopped nuts gently.
  6. Pour batter into the prepared loaf pan and bake for 50 minutes. Cool completely before removing from pan.
Glaze
  1. Mix powdered sugar, half and half, corn syrup, and vanilla in a small bowl until smooth.
  2. Spread the glaze evenly over cooled bread and let set before slicing.
