  • 20 soda crackers soda crackers crushed
  • 0.75 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 cup salted butter melted
  • 1 cup shredded sweetened coconut
  • 1 can blueberry pie filling 21oz/540ml can

Method
 

Preparation Steps
  1. Preheat oven to 350°F.
  2. Add soda crackers, brown sugar, flour, and baking soda to a bowl and stir to combine. Mix in butter and coconut.
  3. Press 3/4 of the cracker mixture into a greased 8-inch baking pan. Spread blueberry pie filling on top. Cover with the remaining cracker mixture.
  4. Bake for 30 minutes. Let cool before serving.

Notes

Serve with a scoop of vanilla ice cream for an extra treat.
