  • 1 seedless cucumber cucumber peeled and diced
  • 2 medium ripe tomatoes diced
  • 2 medium Hass avocados diced
  • 1 15.5 oz can black beans rinsed and drained
  • 2 tbsp red onion minced
  • 2 tbsp cilantro minced
  • 2 limes juice of
  • salt and fresh pepper to taste

Method
 

Preparation Steps
  1. Combine all the ingredients in a large bowl.
  2. Season with salt and fresh pepper to taste.
  3. Gently toss to combine.
  4. Cover and refrigerate until ready to serve.

Notes

This salad is best served chilled. It can be made a few hours in advance, but add the avocado just before serving to prevent browning.
